Ingredients
 

  • 1 cup 240 ml warm water (110°F/43°C)
  • 2 tablespoons 30 g active dry yeast
  • ¼ cup 85 g honey
  • 1 teaspoon salt
  • 2 tablespoons 28 g unsalted butter, melted
  • 2 cups 240 g all-purpose flour
  • 1 ¾ cups 210 g whole wheat flour

Instructions
 

  • In the bowl of a stand mixer, combine warm water, active dry yeast, and a pinch of sugar. Let it sit for 5-10 minutes until foamy.
  • Add honey, salt, and melted butter to the yeast mixture. Mix with the dough hook attachment on low speed until combined.
  • Gradually add all-purpose flour and whole wheat flour while mixing on low speed. Once the dough comes together, increase the speed to medium and knead for about 5-7 minutes until the dough is smooth and elastic.
  • Shape the dough into a ball and place it in a greased bowl. Cover with a damp cloth and let it rise in a warm place for about 1 hour or until doubled in size.
  • Punch down the risen dough and turn it out onto a lightly floured surface. Shape it into a rectangle and then roll it up tightly, starting from one end.
  • Place the rolled dough seam-side down into a greased 9x5-inch loaf pan. Cover with a damp cloth and let it rise for another 30-45 minutes.
  • Preheat the oven to 375°F (190°C). Bake the bread for 35-40 minutes or until the top is golden brown and sounds hollow when tapped.
  • Use a kitchen thermometer to check the internal temperature of the bread, it should register around 200°F (93°C).
  • Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a sweeter variation, you can add 1/2 cup of raisins or chopped nuts to the dough.
Ensure the water temperature is accurate for yeast activation.
Make sure the bread is fully cooled before slicing to prevent a gummy texture.
