Finely shred the golden beets, carrots, zucchini, and squash and set aside. This can be quite a task to do by hand. In a large saute pan over medium heat, caramelize onion, and peppers together in olive oil. When the onion becomes translucent add the herbs and spices. Cook together until herbs become aromatic, then add the shredded vegetables. Cook all the vegetables together stirring periodically to keep anything from sticking. When juices begin to release from the mixture and create a light sauce, check the texture of the vegetables. They should look a lot like shredded chicken. You don't want to overcook them into a sloppy mess!
