Focaccia is a type of Italian flatbread that is made with flour, olive oil, salt, yeast, and water. It originated in Italy, but is now enjoyed around the globe. Focaccia can be served as an appetizer, side dish, or even a main course. It is delicious when served with a variety of toppings, such as olives, tomatoes, rosemary, garlic, and cheese. This recipe for focaccia is easy to make, and will yield a fluffy, flavorful bread that can be served alongside soups, salads, and main dishes.

  • 500 grams all-purpose flour Bob’s Red Mill
  • 7 grams instant yeast SAF Red
  • 10 grams salt
  • 15 grams white granulated sugar
  • 375 mL cold water
  • 50 mL olive oil


  • In a large bowl, combine the flour, yeast, salt, and sugar. 
  • Slowly add the cold water and 30 mL of the olive oil, stirring until well combined. I use a Danish whisk or a wooden spoon.
  • Knead the dough for 8 - 10 minutes adding the remaining 20mL of oil slowly during the mix.
  • Place the dough in a greased bowl and cover with a damp cloth. Allow to rise for 1 hour. 
  • Punch down the dough and allow to rise again until it doubles in size.
  • Grease a baking sheet with olive oil. 
  • Preheat the oven to 220°C (425°F).
  • Carefully dump out the dough and shape it into a rectangle on the prepared baking sheet. 
  • Drizzle olive oil across the surface of the dough and make dimples in the dough with your fingertips, then brush with more olive oil. 
  • Sprinkle your seasonings across the surface of the dough or decorate with your choice of vegetables
  • Bake for 20-25 minutes, or until the focaccia is golden brown and cooked through. 
  • Allow to cool slightly before serving. Enjoy!
