Yeasted Focaccia

- 500 grams all-purpose flour Bob’s Red Mill
- 7 grams instant yeast SAF Red
- 10 grams salt
- 15 grams white granulated sugar
- 375 mL cold water
- 50 mL olive oil
Instructions
- In a large bowl, combine the flour, yeast, salt, and sugar.
- Slowly add the cold water and 30 mL of the olive oil, stirring until well combined. I use a Danish whisk or a wooden spoon.
- Knead the dough for 8 - 10 minutes adding the remaining 20mL of oil slowly during the mix.
- Place the dough in a greased bowl and cover with a damp cloth. Allow to rise for 1 hour.
- Punch down the dough and allow to rise again until it doubles in size.
- Grease a baking sheet with olive oil.
- Preheat the oven to 220°C (425°F).
- Carefully dump out the dough and shape it into a rectangle on the prepared baking sheet.
- Drizzle olive oil across the surface of the dough and make dimples in the dough with your fingertips, then brush with more olive oil.
- Sprinkle your seasonings across the surface of the dough or decorate with your choice of vegetables
- Bake for 20-25 minutes, or until the focaccia is golden brown and cooked through.
- Allow to cool slightly before serving. Enjoy!
