Ingredients
 

  • 1 tbsp olive oil
  • 1 large onion, sliced
  • 2 bell peppers, sliced
  • 2 cups shredded carrots
  • 2 cups shredded beets
  • 1 ½ tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ¾ tsp garlic salt (to taste)
  • 2-3 tbsp tequila (or water)
  • 1 lime, juiced
  • warm tortillas, for serving
  • guacamole, to finish

Instructions
 

  • Heat a large pan over medium-heat heat and add olive oil. Add onions and peppers and cook until caramelized at the edges.

  • Add shredded carrots and beets. Cover and steam 2–3 minutes to soften.

  • Uncover and season with cumin, chili powder, smoked paprika, and garlic salt.
    1 1/2 tsp ground cumin, 1 tsp chili powder, 1/2 tsp smoked paprika, 3/4 tsp garlic salt (to taste)
  • Add tequila (or water) and lime juice. Cook until the liquid has mostly evaporated and the veggies look glossy.
    2-3 tbsp tequila (or water), 1 lime, juiced
  • Serve hot in warm tortillas with a spoonful of guacamole.

Notes

Replace tequila with water or veggie stock if preferred. Add black beans for extra protein. Great topped with cilantro or pickled onions.
