Ingredients

  • 300 g warm water
  • 8 g active dry yeast about 2 teaspoons
  • 60 g vegetable oil
  • 85 g honey
  • 60 g molasses
  • 5 g salt about 1 teaspoon
  • 250 g bread flour
  • 245 g whole wheat flour
  • 10 g unsweetened cocoa powder
  • 5 g instant coffee granules
  • Cornmeal for dusting

Instructions

  • In a large bowl, whisk together the warm water, active dry yeast, vegetable oil, honey, and molasses. Let it sit for about 10 minutes, or until the yeast is foamy.
  • In another bowl, whisk together the salt, bread flour, whole wheat flour, cocoa powder, and instant coffee granules.
  • Gradually add the flour mixture to the yeast mixture, stirring with a wooden spoon until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead for about 15 minutes, or until smooth and elastic. You may need to add more flour as you knead to prevent the dough from sticking.
  • Place the dough in a lightly greased bowl and cover with a damp cloth. Let it rise in a warm place for about an hour, or until doubled in size.
  • Punch down the dough and divide it into 8 equal pieces. Shape each piece into a log about 6 inches long and place them on a baking sheet sprinkled with cornmeal. Leave some space between them to allow for expansion. Cover with a damp cloth and let them rise for another hour, or until puffy.
  • Preheat the oven to 350°F (175°C) and bake the bread for 20 to 25 minutes, or until golden brown and hollow-sounding when tapped.
  • Transfer the bread to a wire rack and let it cool slightly before serving with butter.
  • Enjoy your homemade Outback Steakhouse bread!

Notes

- Baking times may vary, so keep an eye on the bread as it bakes.
- For optimal results, ensure that the yeast mixture is foamy before adding the flour.
- Adjust flour as needed during kneading to achieve a smooth and elastic dough.
