Ingredients
- 300 g warm water
- 8 g active dry yeast about 2 teaspoons
- 60 g vegetable oil
- 85 g honey
- 60 g molasses
- 5 g salt about 1 teaspoon
- 250 g bread flour
- 245 g whole wheat flour
- 10 g unsweetened cocoa powder
- 5 g instant coffee granules
- Cornmeal for dusting
Instructions
- In a large bowl, whisk together the warm water, active dry yeast, vegetable oil, honey, and molasses. Let it sit for about 10 minutes, or until the yeast is foamy.
- In another bowl, whisk together the salt, bread flour, whole wheat flour, cocoa powder, and instant coffee granules.
- Gradually add the flour mixture to the yeast mixture, stirring with a wooden spoon until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead for about 15 minutes, or until smooth and elastic. You may need to add more flour as you knead to prevent the dough from sticking.
- Place the dough in a lightly greased bowl and cover with a damp cloth. Let it rise in a warm place for about an hour, or until doubled in size.
- Punch down the dough and divide it into 8 equal pieces. Shape each piece into a log about 6 inches long and place them on a baking sheet sprinkled with cornmeal. Leave some space between them to allow for expansion. Cover with a damp cloth and let them rise for another hour, or until puffy.
