Bison & Broccoli Stir Fry

A quick, flavorful stir fry made with browned bison, sautéed onions, tender broccoli, garlic, and a simple homemade sauce. Fast, bold, and perfect over rice.

Ingredients
 

  • 1 onion large; sliced
  • 1 lb ground bison
  • 4 cups broccoli
  • 2 cloves garlic minced
  • 1 tbsp cornstarch
  • 1 tbsp coconut sugar
  • 3 tbsp liquid aminos
  • 1 tsp ginger grated
  • 1 cup water divided
  • brown rice cooked; for serving

Instructions
 

  • Start your rice so it’s ready when the stir fry is done.

  • Sauté the sliced onion in a large pan until softened.

  • Add the ground bison and cook until browned. Remove and set aside without cleaning the pan.

  • Add broccoli and 1/2 cup water to the pan to deglaze, scraping up browned bits.
    4 cups broccoli, 1 cup water
  • Add minced garlic and sauté briefly.

  • Whisk together cornstarch, coconut sugar, liquid aminos, ginger, and the remaining 1/2 cup water.

  • Pour sauce into the pan and simmer until thickened.
  • Return the bison to the pan and combine.

  • Serve hot over rice.

Add chili flakes for heat. Works with beef or turkey as well.
