  • Finely shred the golden beets, carrots, zucchini, and squash and set aside. This can be quite a task to do by hand. I suggest you use a food processor or stand mixer attachment like I have for a real time saver. I have this Kitchenaid attachment, and it makes short work of shredding and slicing (https://amzn.to/2YUq7y4)
  • In a large saute pan over medium heat, caramelize onion, and peppers together in olive oil. When the onion becomes translucent add the herbs and spices. Cook together until herbs become aromatic, then add the shredded vegetables. Cook all the vegetables together stirring periodically to keep anything from sticking. When juices begin to release from the mixture and create a light sauce, check the texture of the vegetables. They should look a lot like shredded chicken. You don't want to overcook them into a sloppy mess!
  • Now that you have your "meat", make your taco anyway you like! We love black beans, sour cream, cheese, and hot sauce at our house. Take it even farther down the produce aisle with some fresh guacamole and a squeeze of lime. Add cilantro and pico de gallo for a Tex-Mex feel. Lettuce and tomato make for a homemade southern approach. Use your imagination, and enjoy your meatless tacos!
