Un-Stuffed Cabbage

Un-stuffed Cabbage is like traditional stuffed cabbage but without all the work or time. It's super easy and tastes great!

Ingredients
  • 2 lb ground beef (lean)
  • 1 sweet onion (diced)
  • 6 cloves garlic (Minced)
  • 4 roma tomatoes
  • 1 cup merlot wine
  • 1 tbsp smoked paprika
  • 1/2 tsp black pepper
  • 2 tsp sea salt
  • 1 cup white rice or steel cut oats
  • 1 1/2 cup water
  • 1 medium green cabbage (cored, quartered, and sliced)
Instructions
  1. Set pressure cooker to Sauté setting and brown ground beef breaking up chucks for a finer texture.
  2. Add diced onion, minced garlic, and diced tomatoes. Stir in seasonings and wine. Pressure cook on high for 10 minutes then release pressure immediately.
  3. Add uncooked rice and/or steel cut oats to the mixture along with water and stir to incorporate. Add cabbage to the top of the mixture, and pressure cook for 4 more minutes on high. This time allow for a 15 minute natural release. Stir together and serve it up hot and fresh!
Recipe Notes

If you are looking to cut some carbs, leave out the white rice. The first time I made this I did half white rice and half steel cut oats, and both turned out great. Enjoy!
