Pressure Cooker Beans and Rice

Make a hearty meal with very little effort with this pressure cooker beans and rice recipe. It takes 2 steps and an hour, but most of that time is simply waiting on the pressure cooker to do its thing. Super easy!

Ingredients
    Step 1
  • 2 cup dried beans (pinto, kidney, borlotti, etc)
  • 8 cup water
  • 1 onion (Vidalia or yellow, quartered and sliced)
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tbsp rosemary
  • 2 tbsp parsley
  • 1/2 tsp black pepper
  • Step 2
  • 2 cup long grain white rice
  • 1 tsp sea salt
Instructions
  1. Add all Step 1 ingredients and pressure cook on high for 30 minutes. Rather than a natural release, immediately release the pressure, and proceed to Step 2.
  2. Stir in the rice and sea salt to the other ingredients... They will sink to the bottom. Pressure cook on high for 4 minutes, and allow a natural realease for 20 minutes. Release the remaining pressure, and serve hot and fresh!
