Gluten-Free Dairy-Free Cornbread
Believe it or not, it's possible to make cornbread gluten-free and dairy-free and still be light and delicious. No dry bricks here!
Ingredients

coconut oil

plain cornmeal

gluten-free all-purpose flour
(Measure for measure)

cup
light brown sugar

baking powder

tsp
himilayan pink salt
(or sea salt)

large eggs

sweet corn
(canned, drained)

cup
coconut milk
Instructions

Preheat the oven to 450 F. Put coconut oil in a 9 or 10" oven safe skillet and warm it up in the oven for about 5 mins while you make the batter

Whisk together remaining ingredients. Add to hot pan.

Bake for 18-22 mins or until golden brown. Enjoy!
