Gluten-Free Dairy-Free Cornbread

Believe it or not, it's possible to make cornbread gluten-free and dairy-free and still be light and delicious. No dry bricks here!

Ingredients
  • 1 tbsp coconut oil
  • 1 1/2 cup plain cornmeal
  • 1 cup gluten-free all-purpose flour (Measure for measure)
  • 1/4 cup light brown sugar
  • 2 tbsp baking powder
  • 1 tsp himilayan pink salt (or sea salt)
  • 2 large eggs
  • 14 oz sweet corn (canned, drained)
  • 1 1/2 cup coconut milk
Instructions
  1. Preheat the oven to 450 F. Put coconut oil in a 9 or 10" oven safe skillet and warm it up in the oven for about 5 mins while you make the batter
  2. Whisk together remaining ingredients. Add to hot pan.
  3. Bake for 18-22 mins or until golden brown. Enjoy!
